Diwali Recipes - The Deltin, Daman

1.      Gulkand Stuffed Rose Sandesh
Ingredients :-
1 tbsp rose sherbat
5 drops rose essence
2 cups full-fat milk
1 tbsp lemon juice
1 1/2 tbsp powdered sugar
1 tbsp milk
2 tbsp Gulkand
20 gms Cashew Nuts
For The Garnish
1 tbsp finely chopped almonds (badam)
1 tbsp finely chopped pistachios
shredded rose petals
Method :-
1.       Boil the milk in a deep non-stick pan on a high flame for 3 to 4 minutes, while stirring occasionally.
2.       Put the lemon juice, mix well and cook on a slow flame for 1 minute, while stirring continuously.
3.       Strain the mixture using a strainer and allow all the whey to drain out.
4.       Combine the paneer, powdered sugar, rose sherbat and rose essence in a big thali and mix very well.
5.       Transfer the mixture into a mixer and blend along with 1 tbsp of milk till coarse.
6.       Divide the mixture into 7 equal portions and roll each portion into a ball and then stuff it with gulkand and chopped cashew nut mixture.
7.       Finally garnish it with almonds, pistachios and rose petals.
8.       Put in the fridge for 30 minutes and serve.
2.      Pista Paan
Ingredients :-
For Pistachio Barfi
Pistachios 1 cup
Milk Powder- ¼ cup
Corn flour -1 tsp
Powdered sugar -1 tbsp
Edible green colour 4-5 drops
Condensed milk -2 tbsp
Cardamom powder- ¼ tsp
For Filling
2 tbsp pistachios blanched, peeled and chopped
2 tablespoons almonds, blanched, peeled and chopped
2 tablespoons walnut, chopped
4-5 drops Kewra essence
1/4 teaspoon cardamom (elaichi) powder
a few saffron strands(optional)
Method :-
1.       Place a small size pan over medium heat and add the shelled pistachios.
2.       Roast the pistachios at medium low heat by continuously flipping so that they don't get burn. Now let the pista cool down and then grind them in mixer to a fine powder.
3.       You may sieve the powder to get rid of any bits of pista left. Roasting helps to grind the pista into fine powder.

5.       Now add the milk powder, sugar, cardamom powder and corn flour. Mix it well; add few drops of edible green food color. Add 1 tbsp of condensed milk.
6.       Mix it with hand, it will turn into crumbly texture; again add 1 tbsp of condensed milk. Now you will be able to form dough. If not add little more condensed milk. Chop the dry fruits and set aside.
7.       In a small pan take 1 tsp of butter or ghee (clarified butter) on low heat, add 1 ½ tbsp of condensed milk and stir it. Add chopped dry fruits, cardamom powder and kewra essence. Stir for 1 minute and turn off the heat.
8.       Now keep the filling mixture aside. Now roll out this dough in between 2 sheets of plastic till it is 5 mm. Cut 12 squares pieces, you may roll again the scrap pieces or enjoy them as pista barfi
9.       Meet the centre point of pieces and join the other half part of barfi. Press it firmly to give a conical shape.
10.   Divide the filling into 8 equal portions. Fill it in the cones with the help of a spoon and garnish with silver leaf and chopped pistachios. Your home made Pista paan mithai is ready to serve.

Navratri Recipes - The Deltin, Daman


Pan cooked, crunchy Kacche Kele Ki Tikki or Raw Banana cutlets is a hearty, satisfying, and delicious savory snack. These gluten-free and vegan tikkis are perfect for social gathering.
Raw banana are a great source of fiber, beta-carotene, calcium, vitamin A and C. They are very nutritious and offer several health benefits in addition to their delicious flavor. Isn’t this a good reason to include raw bananas in your regular diet?
Ingredients
2 small Raw Bananas
2 medium Potatoes
1/4 cup Tapioca flour
1 teaspoon Red chilli powder
1 teaspoon Dried mint leaves
Himalayan salt (Sendha Namak)
3 tablespoons Oil
Instructions
1. This is how raw banana looks like.
2. To begin with, pressure-cook the bananas and potatoes with their peel on. Cook them for about 3 whistles or 10 minutes. Do not rush through this process as we want the bananas to be soft and tender to make a smooth mash.
3. Remove from water and allow them to cool. When comfortable to touch, peel potatoes and banana. Transfer it to a big bowl.
4. Mash potatoes and banana with a fork or potato masher.
5. Stir in all the spices and add Tapioca flour.
6. Grease your hands and shape tikkis.
7. Heat a heavy bottomed pan and add tikkis to it.
8. Cook tikkis for 8-10 minutes on low flame, turning occasionally until evenly browned on both sides.
Serve with Phalhari green chutney.

Ganesh Chaturthi recipe - The Deltin, Daman


Dry fruit Modak Recipe:
Yields 10 Modak
Prep time: 40 mints 
Cooking time: 15 mints
Total time: 45 mints
Festival Sweets
Ingredients:
400 Gram Seedless Dates
100 Gram Almonds
100 Gram Cashew nuts
100 Gram Walnuts
100 Gram Raisins
100 Gram Dry coconut
30 Gram Poppy Seeds (Khus Khus)
1 tsp Ghee
Method:

1.      Chop all the nuts - cashew nuts, almonds and walnuts finely. Also chop the seedless dates and dry coconut pieces to fine pieces.
2.      Dry roast the chopped nuts one by one separately for 1-2 mints taking care that they would not get burnt, remove them and keep aside in a plate.
3.      Dry roast coconut pieces until they turn slight brown in colour and remove them aside too. In the same pan add poppy seeds and roast them slightly until they start popping, remove and keep aside.
4.      Heat ghee in the same pan and add chopped dates and raisins and fry continuously until it comes together and becomes like a thick mass. This takes 4-5 mints roughly. Do not leave it unattended as the raisins might get burnt. Switch off and let it cool slightly.
5.      Grind the roasted nuts with dry coconut pieces and poppy seeds to a coarse powder in pulse mode. I like the bite of dry fruits, so I do not powder them completely and hence keep them very course. It is your wish to grind them how you want. Remove the mixture aside into a plate.
6.      Now add the date-raisin mixture and pulse it in the mixer to get a coarse mixture. Again it is you wish here to grind it smoothly or keep it coarse like I did.
7.      Take out the mixture into the same pan and add coarsely ground nuts and mix nicely and bring it back on the flame and stir continuously for 2-3 mints until the mixture becomes slightly sticky and hold the dry fruit mixture nicely.
8.      Remove the mixture into a plate and let it cool slightly until you can handle with bare hands.
9.      Press the mixture slightly hard to form a sticky mass.
10.  Make gooseberry sized balls out of it and place them in a modak press in moulds it tightly by levelling the down and pressing it firmly to get modak shaped Ladoo. If you do not have modak press you can make into Ladoo.
11.  Prepare all the modak (Ladoo) and store them in an air tight container.
