Holi Recipes by Chef Rishi Bhardwaj, Head Innovation and New Product Development at Del Monte

  

AALOO CHAAT

Make this chatpata, sweet and sour Aloo Chat recipe with boiled potatoes, pomegranate, dhaniya powder, green chilli, sev, chaat masala, Del Monte Garlic Mayo, coriander leaves, amchur powder, and red chilli powder. Enjoy this tasty snack at room temperature or cold with your favourite chai.

Medium Potatos Boiled And Cubed

Green Chilli Finely Chopped

TBSP Red Chilli Powder

TBSP Chaat Masala

TBSP Garlic Mayo

Coriander Leaves Handful

Oil For Shallow Frying

Salt To Taste

Method:

1.       Heat oil in a pan and add jeera, green chillies.

2.       Then add potatoes and shallow fry till they turn golden brown.

3.       Add all the spices and chaat masala and mix well.

4.       Take it out in a bowl, garnish with pomegranate, coriander,sev, and garlic mayo.

Profile of Chef Rishi Bhardwaj

Rishi Bhardwaj is a well-known and brilliant chef with over 22 years of culinary expertise and has cooked for numerous celebrities. He is a chef who specializes in Indian and Mexican cuisines.

He holds a three-year degree in Hotel Management from IHMCTAN Mumbai and a two-year degree in Culinary Management from Oberoi Centre of Learning & Development.

He has experience working with well-known hotels and restaurants. Rishi began his career at the Oberoi in New Delhi’s Indian speciality restaurant Kandahar, before becoming the Lead Chef for banquets where he served 11 banquets, as well as room service and the coffee shop "Palms".

He has not only worked in India but also worldwide, having travelled to Glasgow and then eventually to London to work with Chef Atul Kochhar at Benares, a Michelin-starred Indian restaurant. He returned to India and began working for Barista, a coffee chain where he developed new food products for a new concept within the brand: Barista Crème. He then further developed suppliers & vendors to sell food products to Barista outlets in India as well as in the Middle East.

He has worked for various organisations and brands before moving to YUM! At YUM! he developed ingredients as well as the menu for the launch of "Taco Bell", a Mexican-inspired QSR in India.

He has been with Del Monte India for over 9 years. At Del Monte, Chef Rishi is currently serving as ‘Head Innovation and New Product Development’, where he plays an instrumental role in making formulations for Del Monte products. Chef Rishi has reached various milestones and has received acclaim from several media in India and overseas. He prepares recipes and formulations with nutritional value in mind. He is a trained chef to work on any cuisine, but he specializes in the Indian and more lately Mexican cuisines.
