Himahal Pradesh presents cultural and topographical diversity. The variations in availability of ingredients, environmental conditions, clubbed with time tested traditional knowledge and wisdom have encouraged people of different regions of this hill state to create and develop the consumption of wide range of traditional food and beverages unique to it's region since ages. The cuisine has perpetuated through generations and is a strong binding force for the community.

The Himachali Dham, a feast originally reserved for royalty was considered sacred and prepared only by Botis (Specialised cooks). But with passing years, it began to be prepared during special occasions for everyone.
