SINGAPORE, 5 March 2020 Marriott International Asia Pacific has collaborated with market intelligence agency, CatchOn, a Finn Partners Company, to gather the opinions and insights of over 100 global tastemakers, culinary experts and key figures in a landmark report on the food and beverage industry. The “Future of Food” report is an intriguing read that identifies 20 exciting industry trends to look out for in 2020 and beyond, outlining ideas and places that are likely to influence how people will eat, and live.
The Future of Food report reviews the current state of the global culinary landscape, and predicts the directions the food and beverage industry will take in coming years. The report provides valuable perspectives and insights for industry players to innovate and curate compelling and relevant experiences for an increasingly-discerning clientele. It offers exciting summaries of growing trends, such as the evolution of culinary-inspired travel, the growing appetite for knowledge about ethical food sourcing, the demand for new flavors, the move towards plant-based meat alternatives, and how modern chefs are challenging old stereotypes about the food service industry.

A Sneak Peek Into The Future of Food
The Future of Food report offers thought-provoking summaries of the latest industry directions and challenges. Industry leaders are already successfully meeting these challenges in the form of highly original, locally-relevant culinary concepts and experiences by world-class talents in extraordinary settings.
     Trailblazers of Taste features chefs and other industry stakeholders who are influencing the way we eat. At The Ritz-Carlton, Perth, star chef Jed Gerrard, voted West Australian Good Food Awards Chef Of The Year in 2018, aims to define the modern Australian culinary scene with the use of rare local produce, and fire as the main element in his cooking. Chef Daniel Bucher from Bangkok Marriott Marquis Queen’s Park champions sustainability by rolling out low carbon, zero food waste menus. At Goji Kitchen + Bar, one of the city’s largest all-day dining destinations, he has also initiated a “Zero Waste to Landfill” program. The hotel is striving to become the first urban five-star hotel in Southeast Asia to achieve zero food waste going to landfills.
     The allure of second-tier cities is set to continue to grow in the new decade, as highlighted in “Second Best”The hotel company is enhancing its brand footprints across Asia Pacific by expanding into secondary cities, continuing to serve travelers as they visit and explore attractive new destinations across the region. In Thailand, Hua Hin Marriott Resort & Spa brings upscale services and accommodations to this ancient royal seaside resort town. Here, its beachfront grill restaurant Big Fish & Bar presents fresh seafood prepared with local expertise. In Australia, W Brisbane introduces sophisticated New York style to this laid-back metropolis playfully knowns as BrisVegas. Three Blue Ducks, its signature restaurant, overlooks the iconic Brisbane River, and captures the essence of natural eating with a wood fire oven and grill.
     In "Island Life" the report spotlights island destinations that are gaining prominence for their restaurant scenes, culinary traditions and great local produce. Taiwan, famous for its street food, also has an established dining scene that is blazing trails in international and Asian fusion cuisine. The acclaimed signature restaurant at Taipei Marriott Hotel, The Dining Place, serves traditional as well as modern interpretations of classic Cantonese, Sichuan, and Taiwanese cuisines. The report also spotlights Tasmania as another hot new destination in food escapism. From saffron to salmon and from olive oil to wasabi, the island's pristine environment produces the finest and most sought-after ingredients in world cuisines. The Tasman, A Luxury Collection Hotel, Hobart, is slated to open in late 2020 to raise the culinary stakes here, with its stunning architecture embracing the distinct character and rich heritage of its surroundings. The hotel will welcome guests who wish to explore the national parks, historic attractions, outstanding restaurants and boutique wineries in this beautiful destination.
     In the section titled “Feel Good Inc.”, the Future of Food reports that the global wellness industry is currently estimated at USD 4.2 trillion annually. The shift towards healthier living and eating is gaining momentum, and many hotels, restaurants and bars are responding to customers' demands for more feel-good options, even for traditional indulgences such as beer and other alcoholic beverages. Low and zero alcohol options are quickly going mainstream on menus. In W Kuala Lumpur, creative local flavors such as bitter gourd, pandan and gula melaka tempt guests in alcohol-free cocktails. The Ritz-Carlton, Macau incorporates health-giving ingredients such as spirulina and kombucha into its decadently delicious jasmine kombucha mocktails.
